Easy Blueberry-Buttermilk Donuts





Before Vivian was born, and before Bubba started Kindergarten, Bubba and I had a special tradition.  We would leave the house early in the morn, and go to Dunkin Donuts for a quick donut date before school about once a month.  We did this from the time Bubba was 2 years old until he started Kindergarten.  Now it is impossible to have our morning donut dates because not only do I have to drop Bubba off at school on time, but I also have to get Vivian dropped off and situated at her school before heading to work.  This is a lot to pack in before 8AM, so the morning donut dates became a thing of the past.  

I had been missing our donut dates so I decided to start making donuts at home.  I purchased a donut pan from Target which makes 6 regular sized donuts at a time.  I am still trying out new recipes, but my current favorite are baked buttermilk donuts.



This recipe yields about 1 dozen regular sized donuts

| I N G R E D I E N T S |

2 Cups AP Flour
1 Cup Sugar (or Stevia)
1 tsp Baking soda
1 tsp Salt
3/4 Cup Buttermilk
1 Cup Canola Oil
2 Eggs
1 tsp Pure Vanilla Extract
1 tsp White vinegar
3/4 Cup Blueberries

Pre-heat oven to 375 degrees. Spray donut pan with non-stick spray

Mix the first 4 ingredients together in medium bowl.

In another bowl mix together remaining ingredients, except for vinegar and blueberries. 

Pour wet mix into dry ingredients and stir until combined, then add the vinegar.

Once everything is well mixed, add blueberries and gently stir.

Pour batter into a large gallon zip lock bag and snip an opening on the tip large enough for the blueberries to pass through.

Fill donut forms 3/4 full. Bake for 14 minutes, Remove donuts from pan and let cool on wire rack

You could glaze these if you like, using powdered sugar, milk and vanilla.  Bubba asked me not to glaze them as he liked them plain.

This recipe would make excellent cupcakes as well.  They are super moist and subtly sweet with bursts of blueberry all through it.
